Cinco de Mango: Mango Ice Cream

April 26, 2012
MangoIceCreamWM

A tweet from former Seattleite and pro pastry chef Dana Cree intrigued me: “if you buy coconut cream as well as milk you can make ice cream w/o any thickeners. 20% cream, 55% milk. 25% sugar + salt tt” That was in September. It was cold. I didn’t make any ice cream. I filed the tweet away for a sunny day. On Saturday, that day arrived. I bought the three beautiful champagne mangoes to flavor the ice cream. Or rather, the frozen dessert: without milk, cream, or eggs, it’s barely ice cream. Of course, not being able to...

Chocolate Chile Pepper Ice Cream Recipe

July 10, 2011
choc and chili

I don’t really like chocolate, and I’m okay with that. Most people I know aren’t. They insist that I’m either lying or delusional, or more likely, both–whatever it is, not loving chocolate is considered inherently suspicious. I, on the other hand use it to justify the many things that I do like (butter, lamb meat, large quantities, sometimes all of those, together–and much more). “Hmm, a fourth serving of sticky rice seems a little bit piggy, but hey, everyone ELSE had chocolate,” I say to myself. As is the case with every rule (or mild declaration, in this...

Inspired: Butterscotch Bourbon and Miso Ice Cream

May 15, 2011
Butterscotch Bourbon Miso Ice Cream on Green

The result of my inspiration this week was Butterscotch Bourbon Miso Ice Cream. It was an off hand conversation that began this ice cream. I was discussing my theory on ice cream-it’s a great blank canvas on which to test out taste theories. I told stories of Sichuan Peppercorn flavor and spicy mango gelato with candied lime peel. “Have you ever made one with miso?” Asked Soojin, who I had only met moments ago. I paused, the wheels already beginning to spin. Meanwhile, on the other side of my weekend, I had been watching the incredible Penny De Los...

Pomegranate Sorbet

Pomegranate Sorbet

Pomegranate Sorbet. That’s what it is, plain and simple. Both infused with and garnished with grapefruit mint from my garden. Not grapefruit and mint, but rather a mint that has a wonderful citrus-y tang to it. I chose to make pomegranate sorbet because the temperatures were climbing (and staying high) and I had yet to get all the ice cream making supplies in house yet, so there wasn’t much to choose from. A few POM Wonderful pomegranate juice bottles had been languishing away in the back of our fridge since they sent me them to sample a few months...

Szechuan Peppercorn Ice Cream

Szechuan Peppercorn Ice Cream

Ice cream may not be the first thing that comes to mind for a holiday season dessert, but that doesn’t mean it can’t fit right in. Made with the floral and slightly mouth-numbing Szechuan peppercorns, this ice cream feels cozy, despite its temperature. Also called Sichuan peppercorns or Sansho peppers, these are actually a berry and often used to a zing to spicy food while having a slight anesthetic effect on the tongue, but the fragrant aspect of it has always led me to think a Szechuan peppercorn dessert would be perfect. It finally stopped snowing here and has been...

An End of Summer Ice Cream Bash

An End of Summer Ice Cream Bash

Oh summer, how cruel you were this summer. For 3 months, we never knew if rain would be pouring or sun shining. Now, though, now that it is September, the warm weather has arrived. And is staying for the forseeable future. What’s a girl to do? Make ice cream like it is her job, I believe! I have never before been an ice cream lover, until I got my own ice cream maker. Oh, sure I savored the occaisional cone of butter pecan in my life, but I never understood the need for something sweet, so ice cream...

Totally Winging It: Peanut Butter and Banana Ice Cream

Totally Winging It: Peanut Butter and Banana Ice Cream

An ice cream to take you down memory lane. A recipe pulled from thin air. Some things, my friends, are magic. I don’t remember how the conversation started. All I know is that one second I was idly having a beer at a bar in Ballard, the next I was struck with inspiration. Demanding that we stop for milk and cream on the ride home, I devised a plan. It looked like this: Consult internet for banana ice cream recipe, mix in peanut butter at the end. The first problem was that I couldn’t find a banana ice cream...

Strawberry Mint Frozen Yogurt

Strawberry Mint Frozen Yogurt

Supplies were dwindling, the economy hitting home. I couldn’t bear the thought of not having my latest ice cream flavor in the freezer. You give a girl an ice cream maker… Suddenly I was an addict. I contemplated my fridge–the dairy was scarce, no milk, no cream. I refused to go to the store and buy more milk, cream and eggs. A $10 run could easily turn scary big. Could I unmake the cream that I’d made into butter last week? Then, hanging out in the back corner of the second shelf, there it was. The final third...
